History of Your Favourite Curry: Pathia

Over the last few months, we have been bringing you the history of some of our favourite curries. So far we have looked at the Tikka Masala, Bhuna, Vindaloo and Rogan Josh and took you on journey of discovery to understand the paths these dishes have taken to land of your plate. This week, we will be looking at the origins of different dish, the Pathia.

Unlike some other curries which are popular across the European population, such as Korma and Tikka Massala, this dish has a tomato base, being both sweet, sour and slightly spicy in flavour. This is very different to the aforementioned dishes, which are usual extremely creamy in order to give them their mild flavour, which in turn can lead to them being rather heavy and packed full of calories (although it is definitely worth it). The flavour comes from a mixture of traditionally used Gujarati curry spices, combined with Jaggery, which is a type of cane sugar, and lime juice. The heat in the dish is created by the use of fresh green chilli peppers and dried red chilli peppers, which combined together certainly give is a bit of a kick! Unlike many other tomato based curries, the Pathia does not use ginger, which helps you to distinguish it from many other dishes.  The sauce itself is very versatile, so can be cooked with chicken, lamb, prawns or vegetables and still retain all if its unique flavours.

The Pathia originally stems from traditional Persian cuisine, but has since been adapted as new areas have picked it up. It still remains particularly popular in the Parsi population within India, who migrated to India from Persia many centuries ago, settling in the area of Gujarat.

Traditionally Pathia would be prepared and served for special occasions such as the birth of a child, or at a wedding reception.
